Breakfast Skillet

4-5 Potatoes diced

1 lbs sausage ( I used hot)

Package of Thick Cut Bacon

1 large Onion

Red, Green, Yellow, Orange Peppers

1 tsp Garlic Powder

3 - 6 Eggs

Fresh Parsley for Garnish

Salt and Pepper to Taste

Shredded Cheese

*****Cast Iron Skillet works best******


1. Cut your peppers, and onions and set to the side.

2. Dice your potatoes and put them in cold water (rinse and drain once its time to add).

3. Cook your sausage and set to the side.

4. In the same skillet, cook 5-6 slices of bacon and set aside.

5. On medium heat, add the peppers and onions

6. Once they soften up, add the potatoes, mix Throughly and add the garlic powder and mix.

7. Taste the veggies and see if you need to add salt.

8. Cook for 7-8 minutes with top on. You don’t want to over cook especially the potatoes.

9. Add your meat, and stir. Cook for another 3-4 minutes covered.

10. Remove top, and with a ladle, make indentions (3-6) and just crack an egg and pour in the indentions.

11. Set the oven to 400 degrees and once temp is up, place the skillet in the oven for 10 minutes.

12. Remove and add your favorite cheese on top and put back for 1 min.Remove and let rest for 5- 8 min and serve.
