Crustless Pizza


I love Pizza, but Pizza doesn't love me. I'm one of the biggest Pizza fans you will find and now that I'm eating as a diabetic, I had to find a way to enjoy the taste of Pizza without all the guilt. I think I found it. Give it a try!

INGREDIENTS:

  • 1 pound of Hot Italian sausage or your fav sausage.

  • 1 Cup of Rao's Marinara

  • 2 Cups Shredded Mozzarella cheese, divided

  • 1/2 Green Bell pepper, sliced

  • 1/2 Onion chopped or sliced

  • 4 ounces Mushrooms, sliced

  • Pepperoni ( Can use Turkey if you wish) Use about 25 slice.

Make it your own, if you don't want veggies, feel free to use just cheese and pepperoni.



INSTRUCTIONS:

  • Preheating your oven to 400F.

  • In the Iron skillet or Pan that is made to go into the oven, over medium high heat, Cook the sausage, onions, mushrooms and green peppers. If you would prefer to wait to cook the veggies in the oven once your crustless pizza goes in, that is ok as well. Make it your own!

  • Drain

  • Use 1 cup of the mozzarella and flatten the meat and cheese mixture into a single layer. This will be our crust/foundation for this crustless pizza.

  • Spoon 1 cup of marinara sauce on top of the meat and cheese and spread with a spoon. (layer the sliced bell peppers, sliced or chopped onions and sliced mushrooms here if you didn't cook it with the meat mixture.

  • Now Top with the other cup of mozzarella cheese.

  • Now for the pepperoni. Place in the 400 degree oven for 20 min or until cheese is melted and brown around the edges. This Makes 4 servings.

Pair with a salad or broccoli and you might have you something!
