Double Smoked Apple Honey Chipotle Ham

Take your ham game to a new level with this recipe! If you need something to take it to the next level, I got you covered. If you don't have a grill, you can do this in the oven as well. What I used was a 10 lbs smoked spiral ham I picked up at the local grocery store. These hams are already cooked, all you are doing is warming up to an internal temp of 140 degrees and serving (get you a cheap cooking thermometer) If you have a smoker, you are adding more smoke to it, thus the name "double smoke" If you don't have a smoker or grill, I still got you covered.


Ingredients:


8-10 lb Spiral Sliced Ham

8oz Sweet Baby Ray's Honey Chipotle BBQ Sauce ( You can use whatever you like)

8oz Apple Jelly




Directions:


1. Preheat Smoker, indirect bbq smoker, grill or oven to 275 degrees. if using a smoker, and you want to add wood, use a mild wild such as apple or cherry chunks to the hot coals for this cook. Use apple or cherry pellets if using a pellet smoker.


2. Remove all packaging materials

IF you are using an oven- Place ham in a shallow roasting pan if using an oven. Cover pan tightly with aluminum foil. After 2 hours, remove foil and proceed to glaze the ham. Do not recover once you have glazed the ham.


*****DO NOT COVER WITH ALUMINUM FOIL IF USING A GRILL OR SMOKER, JUST PLACE ON A HALF SIZE WIRE COOLING RACK OR DIRECTLY ON GRATES*************




3. Place ham in pit or oven for 2 hours.



4. In a small sauce pan over medium heat add apple jelly. Cook the jelly until it turns into a liquid stirring often.





Add the honey chipotle sauce and stir to combine. Reduce heat to low and keep warm.


5. After 2 hours, remove ham, and apply the glaze over the ham using a basting brush.






Continue to cook for 10- 15 minutes or until glaze sets. ( NO LONGER THAN 30 MIN)


6. Remove the ham from the smoker or oven and rest for 10-15 minutes before serving.
