Easy Chicken Fried Rice

There's Nothing like chicken fried rice from your favorite take out spot. This easy recipe will make you a hero in your house. This Is a chicken fried rice, but you can make It a house rice by adding your favorite protein such as shrimp or steak. Add some yum yum sauce for even more flavor!


Ingredients:


2.5 - 3 cups Long Grain Rice (for the best results, cook the rice the day before)

1.5 - 2 lbs Chicken (boneless skinless breast or boneless skinless thighs will work)

1 tbsp minced Garlic

5 green Onions

2 tsp Sesame Oil

1 tbsp Oyster Sauce

1/4 cup Soy Sauce (add more if needed) to taste

3 large Eggs, lightly scrambled

3 tbsp Butter

2 cups mixed frozen veggies, Corn, Peas, and Carrots

1 small white onion, chopped or diced (optional)

Salt and Pepper to taste

Directions:


  1. Cut your chicken into the sizes you would like. While doing this, trim it up by cutting the fat off.

  2. Next bring your pan for cooking (medium high) your chicken up to temp and add extra virgin oil.

  3. Once up to temp, add your chicken. Add some salt and pepper.

  4. Once the chicken is about half way done, add some soy sauce and continue to cook.

  5. After the chicken is done, set aside in a bowl. Line your bowl with paper towels.

  6. Set your heat to Medium- Medium High heat. In your wok add 1 tbsp of butter and allow it to melt. To keep from burning add some extra virgin olive oil.

  7. After the butter is melted, add your beaten eggs

  8. Once you see bubbles in your eggs, move the eggs around and make sure they are scrambling. Break them up once they are scrambled.

  9. Removed the egg, and place on a plate or bowl and set to the side.

  10. Clean your wok, and add some more olive oil.

  11. Add tbsp of butter and once it melts, add your veggies and stir around. ADDING THE FROZEN VEGGIES WILL LOWER THE TEMP

  12. Once the veggies are almost cooked add in your garlic.

  13. Add some of the green onions to the mixture and keep stirring. Make sure you don't burn this.

  14. Put your eggs back inside and move everything back and forth.

  15. Add your chicken back to the wok and add your sesame seed oil and stir.

  16. Add two cups of your rice and stir. If you want to add more rice do so now and continue to stir

  17. Add your oyster sauce and stir.

  18. Add more soy sauce and continue to stir. Good time to taste your rice now. Add more soy if you desire.
